From Manjimup to the World: Why the Southern Forests Produces Exceptional Truffles
There is something about winter in the Southern Forests that is hard to explain unless you’ve experienced it.
The air turns cool and clean. The ground softens. The forest quietens. And beneath the soil, something remarkable begins to mature.
This is truffle season our favourite time of the year.
Our family truffière sits in Smithbrook, near Manjimup, in Western Australia’s Southern Forests. Surrounded by towering karri trees and national park, it is a place that moves at nature’s pace — not ours.
Black winter truffles (Tuber melanosporum) are particular. They need cool winters, well-drained soils, healthy ecosystems and patience. Plenty of patience.
We’ve always believed great produce comes from listening to the land, not forcing it.
A Region That Rewards Patience
When truffle growing began in this region in the early 2000s, it was an experiment built on instinct and belief. The climate felt right. The soils felt alive.
Over time, Manjimup and the surrounding areas earned a quiet reputation for producing truffles of remarkable depth and aroma.
Today, chefs around Australia — and increasingly overseas — look to the Southern Forests for black winter truffles grown with integrity.
For us, that reputation is something we protect carefully.
Growing With Care
At Below&Above, truffles are grown on our family truffière using regenerative and holistic practices focused on soil health and biodiversity.
We believe quality begins long before harvest.
It begins in the soil.
In the roots.
In the balance of the land.
During winter, our trained dogs guide us to each truffle at peak maturity. Every one is carefully unearthed, inspected and handled with respect.
Nothing is rushed.
Once harvested, they are prepared at our Truffle HQ under strict food safety standards — and we are proud to be Australia’s only ISO 22000-certified truffle producer.
But certification is only part of the story.
