Our Truffière

Below&Above is a family-owned truffle producer based in the Southern Forests region of Western Australia — one of the most important Tuber melanosporum growing regions in the Southern Hemisphere.

Our truffière in Smithbrook, near Manjimup, is planted with specially inoculated oak and hazelnut trees and managed using regenerative farming practices. We focus on long-term soil health, biodiversity, and responsible stewardship to ensure consistent production of premium black winter truffles year after year.

All of our truffles are estate-grown, fully traceable, and handled in-house from harvest through to export preparation — making Below&Above a trusted source for international truffle distributors and importers.

Truffles for International Supply

Fresh Black Winter Truffles (Seasonal)

Our fresh Tuber melanosporum black winter truffles are harvested between June and August at peak maturity and prepared for international export within 24 hours of harvest.

Each truffle is carefully cleaned, graded to UNECE standards, and packed to preserve its natural aroma, texture, and flavour.

Typical uses include fine dining service, seasonal tasting menus, and premium gourmet retail — trusted by leading chefs and distributors across Asia, Europe, and North America.

Blast-Frozen Truffles (Year-Round Supply)

To support year-round international supply, we preserve selected truffles using rapid blast-freezing at -25°C.

This process minimises cellular damage and maintains near-fresh performance when shaved or grated directly from frozen.

Our blast-frozen Tuber melanosporum truffles are trusted by professional kitchens and international distributors for consistency, reliability, and year-round availability — regardless of the Southern Hemisphere season.

Truffle Pétale™ (Cryo-Dried Slices)

Our Truffle Pétale™ range offers concentrated flavour and extended shelf life through advanced cryo-drying technology.

Designed for export, premium retail, and distributor programmes, these slices deliver exceptional Tuber melanosporum aroma with the convenience and shelf stability required for international supply chains.
