Our Truffière

Below&Above is a family-owned producer based in the Southern Forests region of Western Australia.

Our truffière in Smithbrook, near Manjimup, is planted with specially inoculated oak and hazelnut trees and managed using regenerative farming practices. We focus on long-term soil health, biodiversity, and responsible stewardship to ensure the consistent production of premium truffles year after year.

All of our truffles are estate-grown, fully traceable, and handled in-house from harvest through to export preparation.

Truffles for International Supply

Fresh Black Winter Truffles (Seasonal)

Our fresh Tuber melanosporum truffles are harvested between June and August at peak maturity and prepared for export within 24 hours of harvest.

Each truffle is carefully cleaned, graded, and packed to preserve its natural aroma, texture, and flavour.

Typical uses include fine dining service, seasonal tasting menus, and premium retail.

Blast-Frozen Truffles (Year-Round Supply)

To support year-round international supply, we preserve selected truffles using rapid blast-freezing at -30°C.

This process minimises cellular damage and maintains near-fresh performance when shaved or grated directly from frozen.

Our blast-frozen truffles are trusted by professional kitchens for consistency, reliability, and extended availability.

Truffle Pétale™ (Cryo-Dried Slices)

Our Truffle Pétale™ range offers concentrated flavour and extended shelf life through advanced cryo-drying technology.
