TRUFFLES

Where are your truffles grown?

All of our black winter truffles (Tuber melanosporum) are estate-grown on our family truffière in Smithbrook, near Manjimup in the Southern Forests region of Western Australia.

What makes your truffles unique?

We are proud to be Australia’s only ISO 22000-certified truffle producer. Our truffles are harvested at peak maturity, graded in-house, and fully traceable from our farm to our customers around the world.

Are your truffles grown using organic or regenerative practices?

Yes. We use regenerative and holistic farming practices focused on long-term soil health and biodiversity, and we are currently progressing toward organic certification.

When is truffle season?

Our fresh black winter truffles are harvested between June and August, depending on seasonal conditions. During the season, they are available online, through selected partners, and from our Truffle HQ in Subiaco.

How do I store fresh truffles?

Fresh truffles should be stored in a sealed container lined with absorbent paper in the refrigerator at 2–4°C. Replace the paper daily and enjoy within 10–14 days for best aroma and flavour.

Can I purchase truffles outside the season?

Yes. Our blast-frozen truffles and Truffle Pétale™ cryo-dried slices are available year-round, allowing you to enjoy premium truffles even when fresh truffles are out of season.

What is Truffle Pétale™?

Truffle Pétale™ is our freeze-dried truffle product made from 100% black winter truffle slices. Simply add to a hot dish and allow a few minutes for rehydration to release their natural aroma.

WINES

Where are your wines made?

Our vineyard, Thella Estate, is located in Eastbrook, Pemberton, Western Australia. It is renowned for producing elegant Chardonnay, Pinot Noir, and Merlot from low-yield, single-vineyard blocks.

Do you bottle-age your wines?

Yes. All Below&Above wines are carefully bottle-aged before release to ensure balance, complexity, and drinkability.

Can I visit your vineyard?

We offer tastings by appointment, and our wines are also available through our online cellar door.

Which wines pair best with truffles?

Our Pinot Noir pairs beautifully with duck and veal dishes, Merlot complements truffle-enhanced meats, and Chardonnay is ideal with eggs, pasta, and risotto.

ORDERS & DELIVERY

Do you deliver truffles and wine?

Yes. We deliver fresh, frozen, and cryo-dried truffles across Australia during the season, and ship wines year-round. Local customers may also collect orders from our Truffle HQ in Subiaco.

How are frozen truffles shipped?

Our blast-frozen truffles are shipped in insulated packaging to maintain temperature and quality. We recommend keeping them frozen until use.

Can I collect my order from Truffle HQ?

Yes. We welcome local collection from Truffle HQ in Subiaco by appointment. Please contact us to confirm opening hours.

Do you export truffles internationally?

Yes. We regularly export fresh and frozen truffles to clients in Asia, North America, and selected international markets, including Singapore, Japan, Hong Kong, the USA, UK, Bangkok and Canada.

All exports are prepared at our Truffle HQ and shipped using temperature-controlled logistics.

Do you offer wholesale pricing?

Yes. We supply fresh, frozen, and cryo-dried truffles to restaurants, retailers, and distributors in Australia and internationally.
