TRUFFLES
Where are your truffles grown?
All of our black winter truffles (Tuber melanosporum) are estate-grown on our family farm in Smithbrook, Western Australia, near Manjimup in the Southern Forests
region.
What makes your truffles unique?
We are Australia’s only ISO 22000-certified truffle producer. Our truffles are hand-
harvested at peak maturity, graded by block, and traceable from soil to table.
Are Below&Above truffles certified organic or grown using organic practices?
Yes they are we are on the path to becoming organic certified and all our truffles are
grown using regenerative practices.
When is truffle season?
Our fresh truffles are available from June to August, depending on seasonal
conditions. During this time, you can purchase them fresh from our Truffle HQ in
Subiaco or online.
How do I store fresh truffles?
Store truffles in a sealed container lined with absorbent paper in the fridge (2–4°C).
Change the paper daily and use within 10–14 days (see storage tips)
Can I buy truffles outside of the season?
Yes. Our blast-frozen truffles and Truffle Pétale cryo-dried slices are available year-
round. These preserve the aroma, texture, and flavour of fresh truffles.
What is Truffle Pétale?
Truffle Pétale is our freeze-dried truffle product, made from 100% black winter truffle
slices. Simply add to a hot dish to rehydrate and release their aroma.
WINES
Where are your wines made?
Our vineyard, Thella Estate, is located in Eastbrook, Pemberton WA. It’s renowned
for its exceptional Chardonnay, Pinot Noir, and Merlot.
Do you bottle-age your wines?
Yes. All Below&Above wines are carefully bottle-aged before release to ensure
perfect balance, depth, and drinkability.
Can I visit your vineyard?
We offer tastings via appointment or see our online cellar.
Which wine pairs best with truffles?
Our Pinot Noir is a classic match for truffle and duck, Merlot pairs beautifully with
truffle-enhanced meats, and Chardonnay complements eggs, pasta, and risotto.
ORDERS & DELIVERY
Do you deliver truffles and wine?
Yes. We deliver fresh, frozen, and cryo-dried truffles across Australia during the season. Wines can be shipped year-round. Though retail customers we organise
delivery to our Truffle HQ.
How are frozen truffles shipped?
Our blast-frozen truffles are shipped in insulated packaging to maintain their
temperature and quality. We recommend keeping them frozen until use.
Can I collect my order from Truffle HQ?
Yes. We welcome local pickups from Truffle HQ in Subiaco. Just message us to
confirm hours or arrange an appointment.
Do you ship internationally?
Yes. We export Worldwide. Wholesale and distributor inquiries are welcome.
