Week Seven — Notes from Our Truffière, Manjimup
We are now into week seven of the season, with three weeks remaining. I wanted to share where things stand.
The volumes have picked up significantly from the early weeks and the quality has been exceptional. The truffles coming out of Smithbrook right now are the best we have produced — deeply aromatic, complex in flavour, and exactly what we hoped for when we planted those first trees over a decade ago.
We have been thinking a lot this season about why the quality is what it is. We believe our approach to regenerative farming is coming into its own. We grow without pesticides or synthetic fertilisers and we manage the soil with a long-term view — leaving it in better condition than we found it. That philosophy takes time to show in the product. This season, we believe it is showing.
Supply has been strong and we have been genuinely happy with how the season has unfolded. Our truffles are shipping to chefs and distributors across Europe, the United States, and Asia — and the feedback from the kitchens receiving them has been wonderful.
